I make this watermelon cucumber salad for all of my summer picnics. It's always a huge hit!
Ingredients
- red onion, halved and sliced into thin half-moons: 1 piece
- lime juice: 2 Tbsp (to taste)
- extra-virgin olive oil: 2 Tbsp
- seedless watermelon: 1 piece (cut into cubes)
- baby cucumbers, seeded and: 3 piece (cut into cubes)
- crumbled feta cheese: 1 cup
- mint leaves, sliced thinly: 0.5 cup

Mix red onion with lime juice in a bowl; set aside to marinate at least 10 minutes. Stir olive oil into mixture.

Toss watermelon, baby cucumbers, and feta cheese together in a large bowl. Pour red onion mixture over watermelon mixture; toss to coat. Sprinkle mint over the salad; toss.
