Ingredients
- medium red beets: 10 piece (peeled and sliced, Use gloves to avoid staining fingers.)
- avocado oil: 0.5 cup (none, For coating the beets.)
- sea salt: 2 tsp (none, To draw out moisture.)
- granulated garlic: 0.5 tsp (none, For flavor.)

Preheat oven to 350°F. Line a few baking sheets with parchment paper and set aside.

Peel beets with a vegetable slicer and cut off ends. Carefully slice beets into rounds, about 3 mm thick, with a mandoline slicer or a sharp knife.

Place sliced beets in a large bowl and add oil, salt, and granulated garlic. Toss to coat each slice. Set aside 20 minutes, allowing salt to pull out excess moisture.

Drain excess liquid and arrange sliced beets in a single layer on prepared baking sheets. Bake for 45 minutes or until crisp.

Remove from oven and allow to cool. Store in an airtight container until ready to eat, up to 1 week.
