A refreshing smoothie combining cucumber, mint, and romaine lettuce, topped with coconut flakes.

Ingredients

  • chopped romaine lettuce: 1 cup (fresh)
  • medium cucumbers: 2 piece (peeled)
  • chopped mint: 0.25 cup (fresh)
  • full-fat canned coconut milk: 1 cup (divided, reserve half for blending later)
  • unsweetened coconut flakes: 0.25 cup (for garnish)

  1. Combine romaine, cucumbers, mint, and 1/2 cup coconut milk in a blender and combine thoroughly.
