A refreshing smoothie combining cucumber, mint, and romaine lettuce, topped with coconut flakes.
Ingredients
- chopped romaine lettuce: 1 cup (fresh)
- medium cucumbers: 2 piece (peeled)
- chopped mint: 0.25 cup (fresh)
- full-fat canned coconut milk: 1 cup (divided, reserve half for blending later)
- unsweetened coconut flakes: 0.25 cup (for garnish)

Combine romaine, cucumbers, mint, and 1/2 cup coconut milk in a blender and combine thoroughly.

Add remaining coconut milk while blending.
