These Cashew Butter Bars will melt and fall apart if left at room temperature, so make sure to store them in the refrigerator or freezer.

Ingredients

  • no-sugar-added creamy cashew butter: 1.5 cup
  • granulated erythritol: 0.5 cup
  • coconut flour: 0.25 cup
  • coconut oil: 0.33 cup (melted)
  • salt: 0.25 tsp

  1. Combine all ingredients in a medium mixing bowl and beat with a handheld mixer until fully incorporated.

  2. Transfer mixture to an 8" × 8" pan lined with parchment paper. Press evenly into pan.

  3. Refrigerate 2 hours or until bars set. Cut into 12 bars and store in an airtight container in the refrigerator until ready to eat, up to 2 weeks.
