This easy corned beef recipe with cabbage is quick and easy. A no-fuss meal that's great for St. Patrick's Day or a weeknight family dinner.

Ingredients

  • potatoes, peeled and quartered: 4 piece
  • carrots: 1 pound (cut into large chunks)
  • onion: 1 piece (cut into wedges)
  • water: 3 cups
  • sugar: 2 Tbsp
  • cider vinegar: 2 Tbsp
  • garlic: 3 clove (minced)
  • ground black pepper: 0.5 tsp
  • bay leaf: 1 piece
  • corned beef brisket with spice packet, cut in half: 1 piece (3 pound)
  • head cabbage: 1 piece (cut into wedges)

  1. Place potatoes, carrots, and onion into a 5-quart slow cooker. Combine water, sugar, vinegar, garlic, black pepper, bay leaf, and contents of spice packet in a small bowl; pour over vegetables. Top with beef brisket and cabbage.

  2. Cover and cook on Low until beef and vegetables are tender, 8 to 9 hours. Remove bay leaf before serving.
