This easy corned beef recipe with cabbage is quick and easy. A no-fuss meal that's great for St. Patrick's Day or a weeknight family dinner.

- potatoes, peeled and quartered: 4 piece
- carrots: 1 pound (cut into large chunks)
- onion: 1 piece (cut into wedges)
- water: 3 cups
- sugar: 2 Tbsp
- cider vinegar: 2 Tbsp
- garlic: 3 clove (minced)
- ground black pepper: 0.5 tsp
- bay leaf: 1 piece
- corned beef brisket with spice packet, cut in half: 1 piece (3 pound)
- head cabbage: 1 piece (cut into wedges)

Place potatoes, carrots, and onion into a 5-quart slow cooker. Combine water, sugar, vinegar, garlic, black pepper, bay leaf, and contents of spice packet in a small bowl; pour over vegetables. Top with beef brisket and cabbage.
