Stages of cooking

  1. Rinse bananas first. Peel them lightly, remove the black spots and keep the peels as they are. Slice them into thin rounds and place in a bowl with water plus a bit of salt, so that they don’t get darkened.

  2. Heat vegetable oil in a frying pan. Reduce the flame to a low or medium and add mustard seeds. Saute until the mustard seeds crackle.

  3. Then add curry leaves and asafoetida. Stir carefully.

  4. Now add sliced bananas.

  5. Mix bananas with the rest of tempered ingredients.

  6. Add red chili powder, coriander powder and turmeric powder. Mix the spice powders very well with banana slices.

  7. Spread banana slices on the pan in a way, so that they get cooked evenly. Don’t cover with any lid and saute the bananas on a low flame. Turn slices and cook the sides which looks uncooked.

  8. Cook until the slices become crisp towards the edges (not all), when banana slices are cooked, sprinkle salt and mix well.

  9. Add chopped coriander leaves and mix.

  10. Serve raw fried bananas with sambar–rice or rasam-rice. Enjoy the dish!
