Ingredients

  • Persian cucumbers: 1 pound (sliced)
  • salt: 1 tsp
  • rice vinegar: 0.66667 cup
  • white sugar: 0.25 cup
  • soy sauce: 1 tsp
  • sesame oil: 1 tsp
  • sesame seeds: 2 Tbsp

  1. Place Persian cucumbers in a bowl; add salt and mix well. Let sit until cucumbers release their juices, about 10 minutes. Squeeze excess juice from cucumbers and drain.
