My mother, Faye Grant, has been making this Passover apple cake for Seder for years. It's the best apple cake you'll ever taste!
Ingredients
- vegetable oil: 1 cup
- white sugar: 1 cup
- eggs: 2 piece
- ½ cups matzo meal: 1 piece
- potato starch: 0.5 cup
- ground cinnamon: 2 tsp (divided)
- apples - peeled, cored and: 8 piece (sliced)
- brown sugar: 0.5 cup (or more if needed)
- ground nutmeg: 0.5 tsp

Preheat the oven to 350 degrees F (175 degrees C ). Grease a 9x13-inch glass baking dish.

Beat oil, sugar, and eggs in a large bowl with an electric mixer until well combined. Stir in matzo meal, potato starch, and 1 teaspoon cinnamon until incorporated. Set aside.

Toss apples with brown sugar, remaining 1 teaspoon cinnamon, and nutmeg in a separate large bowl.

Layer 1/2 of the dough into the prepared baking dish. Pour apple mixture on top, then pat remaining dough over apples. Sprinkle with some brown sugar, if desired.

Bake in the preheated oven for 45 minutes.
