Stages of cooking
Wash red currant, basil and dry the products. Slice the onion into thin semi-circles.
Leave several branches of red currant aside for the decoration of the dish. Mash the rest of the berries in a bowl. Add basil and onion.
Add the pieces of salmon, salt, pepper, olive oil and say sauce. If the salmon is frozen, defreeze it a bit first.
Mix the ingredients well, cover the bowl with the lid (or food wrap) and place into the fridge for about one hour.
Remove the fish from the marinade and put into a fireproof baking form. Bake in the pre-heated to 200 C (392 F) oven for 20-25 minutes.
Serve the salmon on the lettuce leaves and decorate the dish with red currant. That’s it! Very simple, healthy and fantastically delicious! Enjoy the dish!
