- frozen chopped spinach, thawed and squeezed thoroughly to remove liquid: 1 pack (10 ounce pack)
- eggs or equivalent egg substitute: 4 piece
- part-skim ricotta cheese: 1 cup
- freshly grated Parmesan cheese: 0.75 cup
- portobello mushrooms: 0.75 cup (chopped)
- scallions with some green tops: 0.5 cup (finely chopped)
- Italian seasonings: 0.25 tsp (dried)
- pinch salt and pepper: 1 piece (to taste)
