Ingredients
- extra-virgin olive oil: 0.25 cup
- lime juice: 1 Tbsp
- kosher salt: 0.5 tsp
- ground black pepper: 0.5 tsp
- ground cumin: 0.5 tsp
- ½ cups water: 1 piece
- dry quinoa (such as Quinta®): 1 cup
- kosher salt: 0.5 tsp
- black beans: 1 can (15 ounce can, drained and rinsed)
- yellow corn kernels: 1 can (15 ounce can, drained and rinsed)
- red bell pepper: 0.5 cup (finely chopped)
- red onion: 0.5 cup (finely chopped)
- fresh cilantro: 0.5 cup (finely chopped)

Make dressing: Whisk together olive oil, lime juice, salt, pepper, and cumin in a large serving bowl until combined.

Make salad: Bring water, quinoa, and salt to a boil in a saucepan. Reduce heat to medium-low, cover, and simmer until quinoa is tender, 15 to 20 minutes.
