This super wholesome, warm quinoa recipe is jam-packed with nutrients and high in protein and iron.

Ingredients

  • extra-virgin olive oil: 0.25 cup
  • lime juice: 1 Tbsp
  • kosher salt: 0.5 tsp
  • ground black pepper: 0.5 tsp
  • ground cumin: 0.5 tsp
  • ½ cups water: 1 piece
  • dry quinoa (such as Quinta®): 1 cup
  • kosher salt: 0.5 tsp
  • black beans: 1 can (15 ounce can, drained and rinsed)
  • yellow corn kernels: 1 can (15 ounce can, drained and rinsed)
  • red bell pepper: 0.5 cup (finely chopped)
  • red onion: 0.5 cup (finely chopped)
  • fresh cilantro: 0.5 cup (finely chopped)

  1. Make dressing: Whisk together olive oil, lime juice, salt, pepper, and cumin in a large serving bowl until combined.

  2. Make salad: Bring water, quinoa, and salt to a boil in a saucepan. Reduce heat to medium-low, cover, and simmer until quinoa is tender, 15 to 20 minutes.
