- regular long-grain white rice: 1 cup
- water or chicken broth: 2 cups
- olive oil: 1 Tbsp
- onion: 1 piece (diced)
- garlic clove: 1 piece (minced)
- cumin: 1 tsp
- turmeric: 0.5 tsp
- paprika: 0.5 tsp
- salt: 0.5 tsp
- black pepper: 0.25 tsp
- bay leaf: 1 piece
- parsley or cilantro: 0.25 cup (chopped, optional)

Rinse the rice under cold running water until the water turns clear. Drain the water and set aside.

In a medium saucepan, heat the olive oil over medium heat. Add the onion and garlic, and cook until softened.

Add the spices, salt, and pepper and stir well for a minute until fragrant.

Add the rice and stir to coat it in the onion and spice mixture.

Pour in the water or chicken broth and add the bay leaf. Bring to a boil.

Reduce the heat to low, cover the saucepan and simmer the rice for 20-25 minutes or until the liquid is absorbed and the rice is tender.

Fluff the rice with a fork and remove the bay leaf.

Garnish with chopped parsley or cilantro, if desired, and serve hot!
