These tasty little bites are packed with so many things that are good for you: sweet potato, oats, almond meal, hemp seeds, and almond butter. They are a great boost of protein and energy for when you need a snack. They are gluten free, and you can make them vegan by replacing the honey with maple syrup.

Ingredients

  • and mashed sweet potato: 1 cup (cooked)
  • rolled oats: 0.5 cup
  • almond meal: 0.5 cup
  • hemp seeds: 0.25 cup
  • almond butter: 0.25 cup
  • honey: 1 Tbsp (to taste)
  • ground cinnamon: 2 tsp
  • vanilla extract: 1 tsp
  • sea salt: 0.125 tsp

  1. Place mashed sweet potato, oats, almond meal, hemp seeds, almond butter, honey, cinnamon, vanilla, and sea salt into a bowl and stir until all ingredients are well combined.

  2. Refrigerate the mixture for 15 minutes. Roll chilled mixture into about 20 1-inch balls. Place energy balls back into the refrigerator for 15 minutes until set and cold. Store in a covered container in the refrigerator for 3 to 5 days.
